As a Communication Management graduate student at Emerson, I've been exposed to a wide variety of applications for this line of study. So far, I've taken courses in theory, research methods, stakeholder communication, public affairs, public diplomacy, and web-based communication strategies, all of which have offered distinct contributions to the overall skill set I'm looking to develop during my time in this program. While it can sometimes be hard to tie together concepts from different classes, this past spring I became involved in the RediscoveRosarito Project, and I immediately realized that this project would provide me with the opportunity to utilize what I had been learning in the classroom.

"I didn't think Mexico could still surprise me," says Rick Bayless, the star chef at Chicago's Frontera Grill and the host of PBS's Mexico—One Plate at a Time. Yet a recent eating tour along the 775-mile Baja peninsula left him so excited that he decided to devote the entire eighth season of his TV show to his Baja food finds: "Friends laughed at this, but I probably have enough material for more than 14 episodes."

Our cohorts in Chicago are used to following the comings and goings of hometown chef and first crowned Top Chef Master Rick Bayless, but we don't get to see too much of him out here in California. Bayless made an appearance yesterday at Sunset's Celebration Weekend in Menlo Park, and Grub Street San Francisco grabbed a few words with him to discuss any possible expansion plans he has for the West Coast, the meal he had at Manresa on Saturday, and where in Mexico he's been loving to eat lately. (Hint: The eighth season of his PBS show just wrapped, and as Grub Street Chi has already noted, it's entirely focused on the Baja peninsula.)

Rosarito Beach still a pleasant weekend getaway destination.

I drove to Rosarito Beach with friends this past weekend and was surprised to discover that the Baja California town's namesake hotel was bustling with tourists.

Most were Mexicans participating in a church retreat, but at least two dozen guests had made the short drive from Southern California. Perhaps this is an indication that the once-popular tourist destination is mounting a slow comeback two years after the peak of hysteria regarding drug-related violence in Baja's border region.

I probably didn’t need five mayors to tell me that Baja California presented no threat to American tourists, since it was obviously a safe place to haunt, but that’s exactly what transpired during a rainy weekend south of the border.

Since scribes of a more sensationalistic ilk have recast drug cartel violence as if it regularly explodes on street corners everywhere, many tourists have simply stopped visiting Baja. As a result, the five mayors felt compelled to make their cases over the course of a few days.

New Year’s Eve in Mexico… margaritas, mariachi, mar… Latin lovers! But don’t let me get carried away. As I start writing this story, my husband Yuri (of so many years) and I are waiting for a camera-ready sunset on the balcony of our oceanfront suite at the Rosarito Beach Hotel Pacifico Tower.
